    Eggplant is a favorite of mine. I will have to try this recipe. Sounds like a healthier verison of eggplant rollentini. I just had a batch of rollentini this weeekend--it was divine! The eggplant was breaded and fried first. And then then completed rollentini was covered in a rose sauce.

      I have never eaten eggplant, as it is something my family never prepared. What does it taste like? Do you eat it raw or cook it? How do you choose a good one? How do you store it? Do you need to wash it, peel it, de-seed it? How do you cut it?
